Lentil soup is one of the easiest soups to make, incredibly healthy and really tasty. It is also the perfect meal for those on a budget as it only requires five ingredients, plus seasoning. On top of this it is suitable for vegans. I usually whip up a large batch of lentil soup and put a lot of it in the freezer as a healthy go-to meal during autumn and winter.
Ingredients
1 tbsp olive oil
1 onion, chopped
5 medium carrots, chopped
150g red lentils
1 liter vegetable stock
Salt, pepper and parsley to season
How to make lentil soup
- Heat the olive oil in a large saucepan
- Add the onions and cook for a few minutes
- Add the carrots and lentils
- Pour in the stock and bring to the boil then simmer for about 15 minutes until lentils are cooked through (you may want to add more water depending on how thick you like your soup)
- Once cooked, allow to cool slightly then puree in a food processor or blender
- Reheat the pureed soup in a saucepan and season to taste with salt, pepper and parsley
