As a vegetarian I’m always on the lookout for a good meat-free burger recipe. These chickpea burgers are one of my favourite as they are easy to make and are a good source of protein. I will often have these with a side helping of baked sweet potato wedges as a healthier version of the classic burger and chips.
Ingredients
- 400g can chickpeas, drained and rinsed
- 1 garlic clove, chopped
- 2 tsp parsley
- 1 tsp ground cumin
- 1 tsp ground corriander
- 1/2 lemon
- 2 tbsp plain flour
- 1 small red onion, chopped
Method
1/ Put all the ingredients into a food processor and squeeze half the lemon to add lemon juice to the ingredients. Blend until smooth.
2/ Put the mixture into a bowl and make four equal round balls.
3/ Heat a small amount of olive oil into a frying pan. On a low heat add the burgers, pressing down on the burger balls to flatten, and fry for several minutes on each side until slightly golden.
