INGREDIENTS LIST
- 2 medium-sized zucchini, sliced lengthwise (quartered)
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/4 cup (60ml) vegetable stock
- 1/4 cup (60ml) lemon juice, more for serving
- 1/4 cup (60ml) olive oil
- 1 tablespoon unsalted butter, melted
- 1/4 teaspoon salt and fresh cracked black pepper
DIRECTIONS
1. To make the grilled zucchini: Preheat your grill to medium-high. Toss zucchini with olive oil, lemon juice, Italian seasoning vegetable stock, garlic powder, and melted butter in a large bowl. Season with 1/4 teaspoon salt and black pepper to taste.
2. Once the grill is hot, place zucchini on the grill using tongs. Grill the zucchini for 2 to 3 minutes. Flip and continue cooking on high for 2 to 3 minutes more.
3. When zucchini is tender with nice charred marks, remove from heat, adjust seasoning as needed, and serve immediately.
