Earlier this week it was raining all afternoon and, as I was at home and had a little bit of free time, I decided to bake a batch of blueberry and cinnamon muffins. I’m not going to lie, these muffins aren’t the healthiest snack to eat, but they are really quick and easy to make. They are also perfect as a post-long run treat or if you just feel like indulging a little on a cold and rainy day, after all having the occasional treat is important for living an overall healthy lifestyle.
Ingredients
120g sugar
110g butter
200g self raising flour
2 eggs
125g blueberries
How to make blueberry and cinnamon muffins
- Preheat oven to 180 C
- Line a muffin tin with paper cases
- Cream together the butter and sugar
- Beat the eggs into the mixture
- Add flour and milk to the mixture and beat until combined
- Stir in the blueberries and cinnamon
- Fill muffin cases until ⅔ full
- Bake in the oven for 25-30 mins
